Juan Montalvo lives in Boca Raton with his family and has recently retired as paella chef to take his RV across country. It has been something him and his wife, Mary, have dreamed about in the past, and due to unfortunate health problems with Mary, they felt it was a sign to retire and enjoy life outdoors. Not to forget, he was a great cook and people loved his food.

PalmBeachPost.com writer Liz Balmaseda relays what Juan says about feedback oeile give him: “People would come up to me and say, ‘I’ve been to Spain and this is the best paella I’ve had,'” says Montalvo. “Making paella became a zen thing for me. Like Mary says, I got to the point that I could make paella in my sleep.”  However, "The Hungry Cuban", as he is nicknamed, felt it was time to hang up the apron. "We’ll head up the east coast and visit friends and churches along the way,” says Montalvo. The plan is to travel about nine months out of the year and spend the winter season in South Florida.
