One of my favorite parts of the RV lifestyle is bringing the kitchen along for the ride and all of the amazing culinary possibilities that affords. The comforts of RV camping extend far beyond a cozy bed and warm place to sleep and the luxury of having a well-stocked RV kitchen with refrigeration and freezing capabilities really means that you are able to cook up all or any of your favorite dishes no matter how far from home you end up. The sky is the limit for recipes both in diversity of flavor and function to cook up mouthwatering meals that are sure to satisfy your hunger along with any other campers who are lucky enough to be joining you.

In a previous post we took a similar look at some favorite recipes to get you started on the path towards creative campfire cuisine and in this blog we will add some new recipes, suggestions, and tips to keep things going for the duration of the summer. It is important to remember that camp meals don’t have to be just beans & weenies and that there is not a lot of additional effort required to whip up food that is both delicious and memorable. Campfire cooking is a passion and labor of love as much as it is a talent and skill. If you take the time to produce one of these meals for your family and friends, it can easily turn in to a highlight of the trip. I can’t tell you how many fellow campers I have impressed with an easy skillet concoction that had them exclaiming “we are bringing you along on every camping trip!” It is always awesome to see the smiles and full stomachs camp cooking creates and even more satisfying to produce delectable dishes over an open flame.

While your RV might have a kitchen that is as stocked and supplied as a small apartment or home, in the spirit of summer camping season, the recipes here are all best done over an open flame. A wood campfire is preferred but if it’s raining or you’re in a region that doesn’t allow fires, a gas BBQ or indoor range will suffice. We’ll take a better look at this in a second but having a few cast iron skillets in your cooking arsenal is essential. They work equally well in the kitchen as over an open flame and nothing says campfire cooking better than the sizzle of your favorite skillet. If you’re unfamiliar with cast irons, buy one and prepare some meals at home before packing up your RV. They are versatile and reliable cookware that can last for years if well maintained.

Getting Started

There are a few basic recommendations to get started with camp cooking and it is important to remember to go with the flow as it can take some time to get experienced with cooking over a fire. Temperatures can vary, you may have to adjust where you place the pan, or a stray piece up meat might end up devoured by flames. If any of this happens, don’t fret and keep on cooking! It’s par for the course and happens to even the best cooks out there. Be sure to pack the basics of cooking oil, salt, pepper, and any other favorite spices and sauces. These will get you a long way when creating your own recipes on the fly and allow you whip up easy camp meals in a matter of minutes when low on other supplies or when far from a grocery store.

The Cast Iron Camping Club

This is a club you will want to be a part of. On any RV trip I bring at least 2 different sized cast iron skillets as well as a cast iron flat top that fits perfectly on top of a two-burner camp grill if wood fire is out of the question. Lodge is the legendary brand in the cast iron game but there are other options out there as well including Pioneer Woman and Smithey. Cast iron cooking intimidates some people but they really are a tried and true method for versatile and delicious cooking. Learn how to properly clean and care for cast iron cookware and you may never use anything else. Over a campfire, there is no need to, except for when roasting marshmallows, of course.

The Recipes

Asparagus Pancetta Skillet Hash – This a delicious and healthy way to start any camp morning. Savory, easy and gourmet, it’s an easy way to impress your family or yourself. Is asparagus is hard to come by, you can substitute for just about any green veggie.

Campfire Nachos – You read that right. Nachos. Everybody loves them and they are easily customizable with, or without, your favorite meat.

Old Fashioned Goulash – Hearty and easy to prepare, this one will stick to your bones after a busy day of adventures or when you get a day of colder weather.

Dutch Oven Beer and Sausage – A nice take on a classic camp meal. A Dutch oven is basically a cast iron pot. The fresh onions and peppers really make this dish shine. Delicious for lunch or dinner.

Chili and Cornbread – Two camping classics combined into one. Cast iron cornbread will make you a campground celebrity and with a hidden layer of chili underneath, a surprise awaits in every bite.

BBQ Chicken and Potatoes – Another Dutch oven concoction, this recipe delivers savory flavors of home cooking with every forkful.

Campfire Donuts – Yep, donuts. Cooked over the campfire. It’s like a dream come true and a favorite for kids and adults alike. Dunk these tasty bites into some melted chocolate for an added bonus.

Chocolate Cherry Lava Cake – This one sounds like an order off of the menu of your favorite chain restaurant but will taste even better.
